Ingredients
1 medium acorn squash, halved and seeded
1 Tablespoon extra virgin olive oil (EVOO)
2 Tablespoons brown sugar substitute
Directions
1. Allow 1/2 squash per person.*
2. Preheat oven to 350 degrees.
3. Lightly spray a cookie sheet with a no cholesterol cooking spray.
4. Turn each half, flesh side down, on a cookie sheet and bake for 35-45 minutes or until squash begins to soften.
5. Transfer squash to a baking dish of appropriate size so squash is touching one another, flesh side up.
6. Using a cereal bowl, combine EVOO and brown sugar substitute stirring with a fork until blended.
7. Spoon half the mixture into each squash half. (Prepare enough 'filling' mixture for each whole squash.*)
8. Return to oven. Bake for 30 minutes.
This recipe is good with baked salmon, couscous and a romaine salad.
