Apple and Carrot Topped Tilapia

6-8 tilapia fillets (or other mild-tasting fish)
3 tablespoons extra virgin olive oil
2 Golden Delicious apples, cored and shredded
2 medium carrots, lightly scraped and shredded
1/2 cup green onion, chopped
2 tablespoons lemon juice
1/4 teaspoon ground ginger
1/4 teaspoon ground mustard
1/4 teaspoon Lite salt
1/4 teaspoon black pepper
1/8 teaspoon ground thyme
1/2 cup fat-free, reduced-sodium chicken broth

1. Preheat oven to 400 degrees.
2. Pour olive oil in a large glass baking dish, making certain
bottom is completely covered.
3. Place fillets in dish and set aside.
4. Using the (large) shredding blade of a food processor,
shred the apples and carrots. Finely chop the green onion.
Place these three ingredients in a large mixing bowl.
5. Add all remaining ingredients. Toss to blend well.
6. Spread apple mixture over fillets. Cover with foil.
7. Bake for 30-35 minutes. Uncover a few minutes before
serving to let steam escape. Use a spatula to serve from baking
dish to plates.

My family really enjoyed this dish. I serve it with baked acorn squash and plain couscous. A green salad and dark rye bread
would also complement this meal.
