Apricot-Glazed Salmon
2 tablespoons low-sodium soy sauce
1/4 teaspoon ground ginger
1 teaspoon gound cinnamon
1 12-ounce can apricot nectar
4 6-ounce salmon fillets
(about 1-inch thick)
No-cholesterol cooking spray
1. Preheat oven to 400° F.
2. In a medium saucepan, bring first 4 ingredients to a boil, stirring often. Reduce heat and simmer for 30 minutes; continue occasional stirring.
3. Line an 11” x 14” baking dish with foil. Spray bottom of foil with cooking spray. Place salmon (skin side down) in foil-lined dish.
4. Bake for 15 minutes or until fish flakes easily when tested with a fork.
5. Remove from oven. Drizzle apricot mixture over each fillet. Bake for 5 more minutes.
*Good with green beans and baked potato.
