Whole Wheat Blueberry Muffins

1 egg, slightly beaten
1/2 cup fat-free milk
1/4 cup EVOO (extra virgin olive oil)
1/2 cup whole wheat flour (or white flour, if desired)
3/4 cup sugar or equivalent substitute
1/2 teaspoon Lite salt
2 teaspoons baking powder
1/2 cup chopped walnuts
3/4 cup fresh (rinsed) or frozen blueberries

Directions:
1. Combine egg, milk and oil.
2. Add flour, salt, sugar and baking powder, mix well.
3. Gently fold in nuts and blueberries.
4. Fill muffin liner cups 2/3 full.
5. Bake at 400 degrees for 20 minutes or less depending on oven.
6. Makes 12 muffins.
