1 cup fresh, whole blueberries (set aside)
2 cups fresh blueberries, chopped
1/4 cup fresh lemon juice
3 Tablespoons fresh cilantro, chopped
2 (or less) seeded jalapenos, finely chopped
1/3 cup red bell pepper, diced
1/4 cup onion, chopped
1/2 teaspoon Lite salt
Directions:
1. Combine all ingredients, except whole blueberries, in a medium bowl.
2. Gently fold in whole blueberries.
3. Cover and chill until ready to serve.
This surprising salsa is good over fish or chicken. In fact, it compliments any dish in which you usually serve salsa.
