Broccoli Cornbread

Ingredients

3 large eggs, slightly beaten
1 cup low-fat or fat-free cottage cheese, drained
1 8 1/2 ounce package corn bread (or muffin) mix
1 10 ounce package frozen chopped broccoli, thawed and drained; pat dry with paper towels
1 small onion, chopped
1/2 teaspoon Lite salt
1/2 cup extra virgin olive oil (EVOO)

Directions

1. Preheat oven to 400 degrees.
2. Spray a 9x13-inch baking dish with a no-cholesterol cooking spray.
3. Combine all ingredients in a large mixing bowl just until slightly blended.
4. Pour into prepared dish. Bake for 30 minutes or until an inserted wooden toothpick comes out clean.
5. Let stand 5 minutes before serving.
