Marvelous Brussels Sprouts Medley

Ingredients:

1 large onion
1 pound fresh Brussels sprouts
1/4 cup extra virgin olive oil
1 cup pecan pieces
1 teaspoon Lite salt
1/2 teaspoon fresh ground pepper

Directions:
Cut onion in half. Thinly slice each half. Set aside.
Remove outer loose leaves and any brown areas from Brussels sprouts. Rinse well. Blot with paper towels. Cut sprouts in half. Cut each half crosswise into thin slices.
Place onions and Brussels sprouts in separate one-gallon sealable plastic bags. Chill in refrigerator for 6-8 hours.
When ready to prepare, heat olive oil in a large, heavy skillet (cast iron is best), over medium-high heat.
Add pecans. Saute for 5 minutes or until roasted. Remove and set aside.
Place onion in skillet, stir often for 10-15 minutes or until onion is caramel colored.
Add pecans and Brussels sprouts. Cook about 7 minutes, stir often.
Sprinkle with sale and pepper.
Transfer to a serving bowl.
Brussels sprouts are not at the top of very many people's list of favorite foods. This recipe, however, is incredible - taste-wise and health-wise! A particular substance, indole-3 carbinol, is a strong chemopreventive for cancer and is being studied by the National Cancer Institute. Try it - you'll like it! And so will your body.
