Cauliflower & Broccoli Family Favorite
Ingredients:
1/2 pound cauliflower florets
1/2 pound broccoli florets
1/2 cup fat-free, plain yogurt
1/3 cup low-fat (2% or less) shredded cheddar cheese
1/2 teaspoon yellow mustard
2 Tablespoons crushed whole wheat cracker crumbs or whole wheat bread crumbs
Lite salt and fresh ground pepper
Preparation:
Cook cauliflower and broccoli in lightly salted boiling water for about 7-9 minutes or until tender when pierced with a fork. Drain well.
Coat an 8-inch square baking dish with a no-cholesterol cooking spray.
Place cauliflower and broccoli in dish.
In a separate bowl, combine yougurt, shredded cheese, mustard, salt and pepper.
Spoon over cauliflower and broccoli.
Sprinkle crumbs over top and broil until cheese melts and toping is golden brown.
This dish serves well with a fresh green salad, baked salmon and dark crusty bread.
