Cauliflower Wheat Germ Bake (From April 15 Radio Program)
4 cups cauliflower flowerets
2 teaspoons Italian herb seasoning
1 cup wheat germ
2 Tablespoons grated Parmesan cheese
1/2 teaspoon ground pepper
2 slightly beaten eggs
6 Tablespoons fat-free milk
1 Tablespoon extra virgin olive oil
Directions:
1. Spray a large baking dish with a non-fat cooking spray. Set aside.
2. In a large pot (with a lid) cook cauliflower in a small amount of boiling water for 8-10 minutes or until crisp-tender. Drain.
3. Combine wheat germ, Parmesan cheese, pepper and Italian herb seasoning in a gallon plastic bag.
4. In a small mixing bowl combine eggs and milk.
5. Toss 1 cup of the flowerets in the egg mixture. Coat well.
6. Place egg coated flowerets in the closed plastic bag with wheat germ and seasonings; shake well; place in prepared baking dish. Continue until all 4 cups are prepared for baking.
7. Drizzle olive oil over flowerets.
8. Bake at 400 degrees for 20 minutes or until golden.
This dish is good with a field green salad and baked fish. My grandson proved that even 5-year olds think it's good. Enjoy!
