Fruit & Vegetable Salad with Citrus Dressing
Salad:
4 cups romaine lettuce, cut in bite-size pieces
4 cups fresh spinach, cut in bite-size pieces
1 cup red onion, sliced then separate into rings
1 cup cauliflower florets, cut in bite-size pieces
1 cup garbanzo beans, drained and rinsed
1 cup red cabbage, shredded
2 oranges, peeled, separated and cut into bite-size pieces
1 cup strawberries, sliced
5 Tbsp. walnuts
1/2 cup blue cheese, low fat, crumbled
1 1/2 tsp. ground cumin
4 cloves garlic, minced
Dressing:
4 Tbsp. extra virgin olive oil
4 Tbsp. rice vinegar
2 tsp. soy sauce, reduced sodium
1 cup orange juice
1. Chill 4-6 dinner plates in the refrigerator.
2. Toss all salad ingredients in a large bowl.
3. Whisk all dressing ingredients together.
4. When serving, allow 1/4 cup dressing per salad serving.
5. Store any remaining dressing in the refrigerator.
