Fruited Wild Rice Medley
5 cups low-sodium, fat-free
chicken broth
1 cup raw wild rice*
1 cup raw brown rice
2 tablespoons extra virgin olive oil
1 cup walnut halves
1 cup dried apricots, quartered
1/4 cup golden raisins
1/4 cup dried cherries or cranberries
1 cup celery, minced
1 teaspoon Lite salt
1 teaspoon freshly ground pepper
* Soak wild rice overnight or at least 8 hours to keep rice from splitting during cooking. Rinse before cooking.
Combine stock and rice in a medium saucepan. Cover and bring to a boil over high heat. Reduce heat and simmer for approximately 50 minutes or until rice is cooked.
Heat olive oil in a skillet. Add walnuts, apricots, raisins, cherries or cranberries, and celery. Sauté gently for 5 minutes.
Stir walnut mixture into rice. Add salt and pepper. Stir well to combine and serve immediately.
