GREEK PASTA & GROUND TURKEY CASSEROLE

Ingredients:

2 cups cooked elbow macaroni
1 lb. 99% fat-free ground beef
1 large onion, chopped
4 Tablespoons tomato paste
1 cup red cooking wine
1 teaspoon ground cinnamon
1 1/4 cups fat-free milk
2 Tablespoons extra virgin olive oil
3 Tablespoons whole wheat flour
1 teaspoon ground nutmeg
2 large tomatoes, sliced
1/3 cup whole wheat bread crumbs
Lite salt and fresh ground pepper

Preparation:
Preheat oven to 425 degrees. Prepare a 9x13 inch baking dish by spraying with a no-cholesterol cooking spray.
Cook macaroni according to package directions. Drain, set aside.
In a large non-stick skillet, cook the onion and turkey until light brown. Lightly season with Lite salt and pepper.
In a small bowl, whisk together tomato paste, red wine and cinnamon. Pour into skillet with turkey.
Stir in macaroni, blending well. Cover and simmer for 5 minutes.
In a medium sauce pan, over medium heat, whisk together milk, olive oil and flour until thickened and smooth. Add nutmeg and small amount of ground pepper.
Layer in baking dish: turkey and macaroni mixture, milk mixture, tomato slices. Sprinkle bread crumbs over top surface.
Bake, uncovered, 35 minutes. Serve hot with a fresh romaine lettuce salad using sliced fresh fruit (strawberries, pineapple, banana, blueberries, grapes). Enjoy!
