Is coconut oil safe to consume if not why?

The form of coconut oil commonly used in packaged/prepared foods, movie theater popcorn, etc. is partially hydrogenated coconut oil, which creates trans fats – and we recommend eliminating all forms of trans fats from your diet. Virgin coconut oil, on the other hand, is not chemically processed and does not have trans fat. However, it is still high in saturated fat, so it should be used in moderation, similar to butter. In fact, some vegans use virgin coconut oil (which is a solid at room temperature) for baking as an alternative to butter, lard or other animal-derived products. But coconut oil does not have the many health benefits of mono-unsaturated fats such as extra virgin olive oil, which is what we recommend for most recipes and cooking uses.

Because my husband does like cooked broccoli, I didn't steam the broccoli but did the rest of the recipe. It was very crunchy yesterday, but today it was still better - as if it had been steamed without the taste. He really enjoyed it both ways. I will make this for company a day ahead of serving. Thanks
