Vivid Orange Potato Puree
1 3/4 pounds sweet potatoes, peeled and thinly sliced
1/2 pound baking potatoes, peeled and thinly sliced
5 cloves garlic, thinly sliced
2 cups reduced-sodium, fat-free chicken or vegetable broth
1/4 cup fat-free yogurt
3/4 teaspoon dried thyme
1/4-3/4 teaspoon ground ginger*
1/2 teaspoon Lite salt
1/2 teaspoon freshly ground black pepper
* Use ginger according to taste. Some people consider ginger to be a strong-tasting spice.
1. Combine sweet potatoes, baking potatoes, garlic, broth and 1 cup of water in a large saucepan. Bring to a boil, reduce to simmer, cover and cook until potatoes are tender (about 20-25 minutes). Drain well and reserve cooking liquid.
2. Place potatoes in a large bowl. Add yogurt, oil, sugar or substitute, thyme, ginger, salt and pepper. Using an electric mixer, beat ingredients until smooth. Add enough of reserved cooking liquid to make a creamy puree.
3. Spoon in a large serving bowl. Garnish top with several sprinkles of dried thyme.
This recipe may be used as a main dish or as an appetizer.
Spread on mild-tasting bread or crackers (low-fat or fat-free, of course).
