Southwest Peanut Butter Dip

Ingredients

1/2 cup creamy peanut butter
1/4 cup water
6 Tablespoons mild salsa Verde
2 Tablespoons fat-free sour cream
1 teaspoon sugar or equivalent substitute
3 Tablespoons cilantro, chopped, set aside

Directions

1. Using a food processor, combine peanut butter, water, salsa, sour cream and sugar.
2. Transfer to a bowl and stir in cilantro.
3. Cover and refrigerate. (Stays fresh up to 3 days.)
4. Serve with fresh veggies, chicken or shrimp.
