JK-Sue's Delicious Pecan Pie

Here's the Family Splurge Recipe of the Year! (Since we've all been so “good” and maintained a healthy diet all year long, we can splurge on pecan pie just once during the holidays, right?) Every family has someone who is asked to prepare a special dish at family gatherings, and our request is always my sister's (nickname - JK-Sue) Pecan Pie.

Ingredients

1 cup white corn syrup*
1 dark brown sugar*
1/3 teaspoon Lite salt
1/3 cup melted margarine or butter
1 teaspoon vanilla
3 whole eggs, slightly beaten
2 cups shelled pecan halves
1 unbaked pie shell

Directions

1. Combine syrup*, sugar*, salt, butter and vanilla. Gently stir in eggs.
2. Pour into a 9-inch prepared, unbaked pie shell.
3. Sprinkle pecans over filling. Slightly press pecans down a little to let mixture flow on top. (Mixture will bubble over pecans while baking; they will be glazed when 'done.')
4. Bake at 350 degrees for approximately 45 minutes or until a knife comes out clean when pierced in the center of the pie.
5. Top with fat free or low fat Cool Whip*, whipped cream*, frozen yogurt* or ice cream*

* Diabetics, use substitute of equal value.
