Ingredients
1 Tablespoon EVOO (extra virgin olive oil)
1 Tablespoon garlic, minced
1 medium onion, cut in strips
1 green bell pepper, cut in strips
1/4 teaspoon Lite salt
4 large portobello mushroom caps
4 whole wheat hamburger buns
mayo with olive oil (lite)
Directions
1. Heat EVOO in a medium skillet over medium heat.
2. Stir in garlic, onion and green bell pepper. Season with Lite salt.
3. Cook about 5 minutes or until vegetables are tender.
4. Turn heat to low.
5. Place mushroom caps on top of vegetables.
6. Cover skillet. Cook about 5 minutes. Turn mushrooms over; cook 5 minutes.
7. Heat hamburger buns in a warm oven.
8. Spread buns with a thin layer of mayo with olive oil.
9. Layer each bun with a mushroom cap and remaining vegetables.
