Recipe - Salmon Loaf

Salmon Loaf

15-1/2 oz. canned salmon, drained
2 cups whole wheat bread crumbs
2 eggs, slightly beaten
1/4 cup non-fat milk
1/3 cup minced onion
2 Tbsp. minced parsley
1 Tbsp. lemon juice
1/4 tsp. lite salt
1/4 tsp. dried dill weed
1/8 tsp. black pepper

Directions:
1. Flake salmon and combine with remaining ingredients.
Form into loaf shape.
2. Spray a loaf pan with non-fat cooking spray.
3. Place salmon loaf in pan and bake for 45 minutes
at 350°F.
4. Remove from pan and place on a platter. Top loaf
with sliced tomatoes and parsley sprigs.

Serving Suggestion:
You may surround the loaf with cooked, drained green
beans or cooked, drained 3-bean salad.
