Sassy Three-Fruit Salsa

2 tablespoons fresh lime juice
1 tablespoon honey
1 tablespoon fresh basil, chopped
1 1/2 tablespoons fresh mint, chopped
1 cup cantaloupe, cut from rind, seeded and finely chopped
1 cup mango, peeled and finely chopped
1/2 cup cucumber, peeled and finely chopped
1/2 cup red onion, finely chopped
1/2 cup green bell pepper, finely chopped
1 cup deep red, sweet strawberries, sliced and then cut in fourths
1 tablespoon jalapeno pepper, seeded and finely chopped (if desired)

1. Whisk together lime juice, honey, basil and mint.
2. In a medium bowl, gently combine next five ingredients. Gently fold in strawberries. Add jalapenos, if desired.
3. Serve with baked or grilled chicken or a very lean piece of beef, multi-grain bread and a fresh spinach, tomato and green onion salad.
