Ingredients:
3/4 cup oats
1/2 cup fat-free milk
1 onion, peeled
2 pounds ground turkey
1/2 cup red bell pepper, chopped
3 cloves garlic, peeled and minced
2 Tablespoons Extra Virgin olive oil (EVOO)
1 egg, beaten
2 teaspoons Lite Worcestershire sauce
1/4 cup ketchup
1/2 teaspoon Lite salt
freshly ground black pepper (to taste)
1 8-ounce can tomato sauce
Directions:
1. Preheat oven to 350 degrees.
2. In a small bowl, combine oats and milk. Set aside.
3. Thinly slice 1/4 of the onion and set aside. Finely chop remainder of onion.
4. In a large bowl combine the following: turkey, oat mixture, chopped onion, red pepper, garlic, EVOO, egg, Worcestershire sauce, ketchup, salt and a few grinds of black pepper. Blend thoroughly.
5. Spray a 9 x 13-inch baking dish with a no-cholesterol cooking spray.
6. Shape meat mixture into a 5-inch wide by 2 1/2-inch high loaf.
7. Pour tomato sauce over top of loaf and sprinkle with sliced onions.
8. Bake for 1 hour or until completely done.
Good served with 'homemade' mashed potatoes and a crisp green salad which includes crispy romaine lettuce, fresh sliced mushrooms, cucumber chunks, cherry tomatoes, red onion slices and a balsamic vinaigrette dressing. Yummy! (Now I'm hungry.)
