Turkey Wraps with Avocado
7 tablespoons fat-free mayonnaise
3 tablespoons Dijon mustard
(coarse-grain)
6 low-fat flour tortillas (10-inch)
2 ripe avocados
1 fresh lime
1 1/2 pound turkey breast, thinny sliced
2 12-ounce jars roasted red peppers, drained and cut in strips
1. Combine mayonnaise and mustard in a small bowl.
2. Lay flour tortillas on a work surface. Spread mayonnaise
mixture evenly over tortillas.
3. Pit, peel and thinly slice avocados. Squeeze lime juice
lightly over slices. Place slices on top of tortillas. Leave about
1/2-inch border around edge.
4. Top with turkey and red pepper strips.
5. Roll up each tortilla tightly. Place seam side down on dinner
plates. Trim ends of wraps on both ends so the bright colors
will give a nice presentation.
Supply each person with a serrated knife for cutting into bite sized
pieces.
Pinto beans and fresh, frozen or canned white
kernel corn go well with this dish.
