Ingredients
2 teaspoons extra virgin olive oil (EVOO)
2 Tablespoons walnuts, chopped
2 cloves garlic, minced
2 Tablespoons golden raisins
1 10-ounce bag of fresh spinach, tough stems removed
2 teaspoons balsamic vinegar
1/8 teaspoon Lite salt
1 Tablespoon freshly shaved Parmesan cheese
freshly ground pepper, to taste
Directions
1. Heal oil in a large skillet over medium heat.
2. Add raisins, walnuts and garlic. Cook stirring about 30-45 seconds.
3. Add spinach. Cook until wilted (about 2-3 minutes).
4. Remove from heat and stir in vinegar and salt.
5. Sprinkle with Parmesan cheese.
6. Serve immediately.
