Ingredients
1 Tablespoon EVOO (for skillet)
1 1/2 cups fresh Shiitake mushrooms, sliced
1 clove garlic, chopped
2 1/2 Tablespoons EVOO
2 1/2 Tablespoons balsamic vinegar
Lite salt and fresh ground pepper to taste
1 10-ounce package baby greens mix
Directions
1. Heat 1 tablespoon EVOO in a skillet over medium heat.
2. Add mushrooms. Cook until soft. Continue cooking until the juices from mushrooms are reduced.
3. Stir in 2 1/2 tablespoons EVOO, balsamic vinegar, Lite salt and pepper.
4. Turn the heat to "off." Let mushroom mixture cool until ingredients are warm, but no longer hot.
5. While mixture is "cooling," line a large salad bowl with baby greens.
6. Pour warm mushroom mixture over greens and toss to blend. Greens will become 'wilted'. Serve immediately.
